Cookies Anyone?

A couple days ago, I asked my family for some help. Everyone in my family is old enough to cook dinner, so it should not always be my responsibility to shop, plan, make and clean up every meal. Everyone agreed to taking a night or two a week. We do realize that this could mean frozen pizza some nights, but that’s ok.

Tonight, I called home to remind the boys that Todd & Morgan were working late and I had a work dinner to attend, so it is just them for dinner. Ross said, “Aw, we ate all the left over’s last night, when it was Morgan’s turn to cook. I know! Andrew and I will make Chocolate Chip Cookie dough! ---- You said we could make what we want on our night to cook.”

I do hope they baked some cookies and did not eat just the dough.


Here is our family’s favorite Chocolate Chip Cookie recipe.

1 cup butter, softened
¾ cup sugar
¾ cup brown sugar
1 egg
1 teaspoon vanilla
2 ¼ ups flour
1 teaspoon baking soda
½ teaspoon salt
1 package semisweet chocolate chips

Heat over to 375 degrees. Mix butter, sugars, egg and vanilla. Stir in flour, baking soda, and salt. (The dough will be stiff, unless you melted the butter instead of just softening it. This is a common problem at our house.) Stir in the Chocolate chips. I usually add a few extra chocolate chips, just for good measure. You know Chocolate is a girls best friend. Use your medium Pampered chef scooper to make the perfect sized cookies. Bake until light brown, 8-10 minutes. Cool slightly and eat immediately. The bad news – 90 calories per cookie.

Tip: To avoid eating the whole batch in one day. I make the cookie dough and scoop dough, with my medium Pampered Chef scooper, into a plastic container. I freeze the individual size cookies. Now when you need just a couple cookies as a pick me up, it is easy to bake just the number I need, without over indulging.
